Madras Style Mutton Biryani
Ingredients
500 gms Mutton
500 gms Basmati rice (soaked 30 mins)
2 -3 Onion (sliced)
2 -3 Tomato (chopped)
2-3 Green chili
2 tsp Ginger Garlic paste
Mint & coriander leaves - a
handful each
2 tbsp Zaiqa Madras Style Biryani
Masala
1 tsp Lemon juice
2 tbsp Ghee
100 ml Oil
Whole Garam masala (1 Bay leaf – 1
Cinnamon - 1/2 inch piece, Cloves – 5, Cardamom – 2 )
Salt to taste
Procedure
1. Heat the pressure cooker add oil, add the whole garam masala, onions saute till the golden brown. Then add the ginger garlic paste, green chilli sauté well for 3-4 mins. Add the tomatoes, coriander and mint leaves.
2. Now add the mutton pieces
saute well add salt to taste & Zaiqa Madras Style Biryani Masala. Fry well and 1 cup water, curd and pressure cook for 1 whistle simmer for 7 mins. Cool
3. Add the rice, mix it gently
without breaking the rice and finally squeeze the lemon juice, ghee. Add water as required approx. 2 hot cup water. Pressure Cook for one whistle simmer 3-4 mins or close and leave for dum about 20 mins till rice is done. (Water ratio is approx. 1 cup rice to 1.5 cups gravy)
